You put what in your pancakes?

Well, it's finally here! It's Christmas time! I am so excited to celebrate and put a period on 2020. Yes, it has been a tough year, but I've learned so much about myself, my business, and my family. Speaking of my family, I've learned how wonderful they are. My wife, my kids, my parents, my sister and her family, and all my "Peeples" in Rock Hill, SC. We've all grown closer together through the trials of 2020. But . . . the one person in my family that I don't get to see as much as I'd like is my sweet mother-in-law, Angel. Yep, her name is Angel and that is what she is! The sweetest, most hard-working, loving and kind person I know. I know that is where my wife gets it from. They are both, well . . . Angels!

Angel with Cas & Pearce She got into town a couple days ago to spend Christmas with my family. And that means two things . . . 1. I get to spend some great quality time with my mother in law. Talking about life, politics, and hopefully getting a mani-pedi with her tomorrow! 2. And the most important, eating some really good food! This woman can cook! She is originally from Taiwan and can cook the best real-deal Asian dishes. One of my favorite is called Bao Zu. I don't know if that is how you spell it, but I don't care, it tastes delicious! It's all this delicious dough, meat, and vegetables rolled up and steamed. I can eat those for days! But this Christmas she dropped a BOMB on my taste-buds. They are called Green Onion Pancakes. Nope, don't judge it by the name, you have to try these. They are soooooo good. It's basically a thicker dough, not quite like a pancake, more like a tortilla, but thicker, with scallions mixed in. It is LIFE CHANGING. You heat them up on the stove top, then add eggs, bacon, a little hot sauce. Roll it up and enjoy! So good. I don't ask for much in life, but if you ever see these for sale anywhere, get them for me. They are only sold in Asian food markets. I'll pay you back!

Anyway, I love my mother in law, and I am so glad she came to visit. The conversations and quality time are great, and the tasty Asian Dishes are a bonus! Here's to a Merry Christmas and Happy New Year to you! May it be filled with love, laughter, and Green Onion Pancakes . . .
